Caponata di Melanzane

Caponata di Melanzane is a typical Italian recipe that combines the mediterranean flavours of aubergines (“melanzane”, in fact), tomatoes, capers, celery, onion and olives, all stir-fried with vinegar (and sometimes a little of sugar). It’s like a warm salad you can taste with some basil on (I didn’t happen to have it so I picked some rosemary from the terrace 😊). Try to cook it for yourself! You’ll be surprised by its flavours! 😊
